Mexi Rice Bowl Recipe!

Hi everyone!

Today I'm excited to share with you my most favorite Rice Bowl recipe ever! This recipe is inspired by all the "Chipotle dupe" recipes online. I've actually never been to Chipotle (I hear it's fab!) but I'm a big fan of any mexican/spanish style foods, and of course.. the amazing rice bowl! So without further ado...






There it is! Possibly the best rice bowl I've ever made. Please note, this works equally (if not better!) with firm tofu in place of the chicken.

-To start, cut up the chicken (or tofu) into small chunks, and add the following spices: Basil (fresh or dried, either works), cumin, chili powder, cayenne powder, minced garlic, and chipotle peppers + salt  & pepper. I eyeball my seasonings when I cook ... the amount will vary depending on how much meat your seasoning and your personal tastes.


You should end up with something like this....

Allow the flavors to meld as long as possible. Overnight, or at the very least 1 hour.

-Next, prepare the rice! This is basically exactly what I found when searching Mexican Rice Bowls online.. and it's amazing!! I cook rice in a small rice cooker, making it easy peasy to whip up anytime!

Measure the amount of rice you need, and instead of cooking it with plain water, cook with chicken stock! I do this almost everytime I make rice, for any kind of meal and it REALLY give the rice a little somethin' extra!
When the rice is done, stir in a small pat of butter or margarine, a sprinkle of minced cilantro, and a few squirts of lime juice (about 1/2 a lime). YUM! If this rice doesn't change your life, I don't know what will! ;)

-Now, cook up the chicken!


Once the chicken is cooked, and the rice is done, the rest of the ingredients are pretty simple! Drain a can of black beans (or if you make them from dried, you'll have to prepare them the night before), and spice them with... a dash of chicken stock, basil, cumin & cayenne and chili powders, then microwave until warm.



Other toppings to add/consider:
-shredded cheddar cheese
-sour cream
-salsa
-sliced olives
-diced avocado
-green Tabasco sauce

Assemble bowls and ENJOY! Mmm... these are seriously SO good... I could eat this every day. lol

Lemon Aid - DIY scrub

I love creating scrubs, lotions and other goodies from scratch. It’s so much fun gathering up my ingredients and seeing them transform into something completely different before my eyes.

Sometimes I want something quick and simple. Lemon Aid sugar scrub it is! You can use this scrub on your face & body, it’s especially good for acne prone, and oily skin types, just be very careful if you currently have breakouts and don’t scrub too hard! I especially like using it on my t-zone, the area is usually breakout free for me, but extra oily.

This recipe is simple… sugar & lemon juice. You can use a fresh lemon if you have them, but I just as often use bottle lemon juice.  You can mix up sugar and lemon juice in a small bowl and apply to your wet skin with fingers, or douse a cotton ball with juice, dip into sugar and apply to your skin that way. The latter works great if you’re just using it just on your face.   

Only mix up what you plan to use in one sitting. If using a fresh lemon, cut into thick slices, sprinkle them with sugar and rub onto wet skin. Remember to thoroughly cleanse your skin before using this or any scrub.

When using this scrub, be sure to apply sunscreen, as lemon juice can make your skin more sensitive to the sun.

I'm gonna let my geek side show!

Well if you didn't already know, I'm kind of a geek. Nerd. Dork. What have you. I used to play online computer games a lot (MMORPGs to be precise) I even beta tested a game once upon a time. So when I discovered a web series about gamers, written by a self professed gamer girl, I had to check it out. The Guild is total awesome-sauce!!! It's a hilarious, character driven show that just rocked my socks! I love Codex, and since also seeing Dr. Horrible's Sing Along Blog (another MUST see!) I've got a major girl-crush on Felicia Day.

In any case, this reveal is because yesterday was the release of the first episode of Season 5 of The Guild! Yay!! I discovered the show part way into season 4, so I've never really had to wait much to watch the episodes. lol It's fun to see how far they've come, and I hope we continue to see more seasons of the show! If they do make the transfer to TV, which would be cool & at the same time... not, here's hoping the show's integrity and originality stick. I mean... Cheese gouging! And pit of noob! And Clara... I'm a Mom at heart, drink up honey. It's hilarious. :o) So if you've got a minute, go check out this series, you won't be sorry!

Fragrance Offerings

You may recognize some of these fragrances from my first shop, Bella Bath & Body. Several scents that I've carried there will be coming to R.D. Apothecary, but under new names. Any questions, please feel free to ask!

EO = all natural fragrance of essential oils

Basmati - Soft and sexy, this is a very unusual fragrance! Milky, sweet, exotic and sensual... Basmati is a delicious gourmand scent that vanilla lovers are sure to enjoy!

Sugar Rush - A fruity blend of cotton candy, lemon drops, caramel and raspberry jam on a dry down of musks. This scent is young, fun and sparkling!

Norwegian Wood - The name is inspired by The Beatles, the scent is mysterious and haunting. A bit herbal, medicinal like lavender essential oil, but warmed with a bit of spice and spring florals.

Soul Daddy (EO) - Aged dark patchouli, zesty lemongrass with a bright punch of uplifting ruby grapefruit.

Lavender Fields (EO) - pure organic lavender essential oil

ChChCherry Bomb! - A bright and punchy black cherries with a touch of delicious almond. (formally called Cherry Almond)

Birthday Cake - Freshly baked white cake, rich and buttery. Topped with fluffy buttercream. Yummy! Sure to satisfy your sweet tooth. Just, don't actually try and eat it!

Coco Cabana - Yummy and creamy, exotic coconut milk.

Kiss Kiss - A wonderful exotic fragrance with base notes of raspberry, cantaloupe, and watermelon, middle notes of jasmine and violet, and fresh top notes of grapefruit and kumquat. So fun, girly, sweet and fresh! (formally called Lick Me All Over)

A Peeeling - Bright and juicy top notes of mandarin, tangerine, lemon satsuma, and ruby red grapefruit, middle notes of bergamot, and a warm base note of oakmoss. Fresh and delicious! (formally called Yuzu)

Wasabi - Incredibly fresh and green smelling. It's sharp, but still very earthy and natural. A unisex fragrance for anyone who enjoys an herbal fragrance.
